  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 large ripe bananas, mashed (about 1 ½ cups)
  • ¼ cup (60ml) buttermilk, room temperature
  • 1 cup (120g) walnuts, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Grease a 9×5-inch loaf pan with butter or cooking spray. Line with parchment paper for easy removal.
  3. Toast the chopped walnuts on a baking sheet for 5-7 minutes until fragrant and lightly golden. Let cool completely.
  4. In a medium bowl, mash the ripe bananas with a fork or potato masher until smooth with some small lumps. Set aside.
  5. In a large bowl, whisk together the flour, baking soda, and salt.
  6. In another large bowl, beat the softened butter and granulated sugar together until light and fluffy (2-3 minutes with a mixer).
  7. Beat in the eggs one at a time, then add the vanilla extract and mix until combined.
  8. Stir in the mashed bananas and buttermilk until just combined. The mixture may look slightly lumpy.
  9. Pour the wet ingredients into the dry ingredients. Fold gently with a rubber spatula or wooden spoon until just combined. Do not overmix.
  10. Gently fold in the toasted walnuts until evenly distributed.
  11. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan on the counter to release air bubbles.
  12. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  13. Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas (brown or black spots) for best sweetness and moisture. Toast walnuts for deeper flavor. Do not overmix the batter to avoid tough bread. Let bread cool completely before slicing. Store in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.
