Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. In a small bowl, mix 2 tablespoons sugar and 1 teaspoon cinnamon for coating; set aside.
  2. In a large bowl, beat softened butter and 1/4 cup plus 2 tablespoons granulated sugar with a hand mixer on medium speed until light and fluffy, about 2 minutes. Scrape down sides.
  3. Add pumpkin puree, egg yolk, and vanilla extract. Beat on low speed until just combined (mixture may look slightly curdled).
  4. In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, cinnamon, and pumpkin pie spice.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined. Do not overmix. Dough will be soft and slightly sticky.
  6. Cover bowl with plastic wrap and refrigerate for 15 minutes.
  7. Using a 1.5-tablespoon cookie scoop, portion dough and roll into balls. Roll each ball in cinnamon-sugar mixture to coat generously. Place on prepared baking sheet, spacing 2 inches apart (6-8 cookies).
  8. Bake for 10-12 minutes. Edges should be set and lightly golden; centers will look slightly underdone and puffy.
  9. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Pat pumpkin puree dry with a paper towel to remove excess moisture. Chilling dough for 15 minutes is essential to prevent spreading. For softer cookies, bake 10 minutes; for crisper edges, bake 12 minutes. Cookies taste even better the next day. Store in an airtight container at room temperature for up to 3 days. Freeze baked cookies for up to 2 months or unbaked dough balls for later use.
