  • 2 ¾ cups (345g) all-purpose flour
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (170g) dark chocolate chips or melting wafers
  • 48 candy eyeballs
  • Black decorating icing or melted chocolate for faces
  • Optional: Purple or green sanding sugar

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat softened butter and sugar on medium speed until light and fluffy, about 3 minutes. Add egg and vanilla, beat until combined.
  3. Gradually add dry ingredients to wet, mixing on low until just combined. Do not overmix.
  4. Divide dough in half, flatten into disks, wrap in plastic, and refrigerate for at least 2 hours.
  5. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. On a lightly floured surface, roll dough to ¼-inch thickness. Cut into circles with a 2-inch round cutter.
  7. Place circles 2 inches apart on prepared sheets. Bake 8-10 minutes, rotating halfway. Cool on sheet 5 minutes, then transfer to wire rack.
  8. Melt dark chocolate in 30-second intervals. Drop dollops onto parchment, spread into rough triangle shapes for witch hats. Refrigerate 10 minutes to set.
  9. Using melted chocolate as glue, attach a hat to each cookie, tilting it slightly. Add candy eyeballs with tiny dabs of chocolate.
  10. Pipe a wobbly smile with black icing or melted chocolate. Sprinkle with sanding sugar if desired.
  11. Refrigerate assembled cookies 30 minutes to set chocolate completely.

Notes

Chill dough thoroughly for best results. Don’t overbake; edges should be just golden. Work in an assembly line when decorating. Cookies taste even better on day two.
