A dramatic Halloween punch with a tart, sweet flavor and a thick, low-hanging dry ice fog that spills over the sides of the bowl like a real cauldron. Quick to assemble and a guaranteed crowd-pleaser.

Ingredients

Scale
  • 4 cups pineapple juice (unsweetened, 100% juice)
  • 2 cups lime juice (freshly squeezed or bottled, unsweetened)
  • 1 cup lemon juice (freshly squeezed)
  • 1 cup simple syrup (equal parts sugar and water, dissolved)
  • 6 cups ginger ale (chilled)
  • 1 teaspoon green food coloring (gel-based preferred)
  • Neon green or black gel food coloring (optional, for extra spooky depth)
  • 23 pounds dry ice (food-grade only)
  • Thick oven mitts or insulated gloves
  • Tongs
  • Plastic spiders or gummy worms (optional, for garnish)
  • Lime slices (optional, for garnish)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Make the simple syrup: Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat over medium heat, stirring occasionally, until the sugar dissolves completely (about 3-4 minutes). Remove from heat and let cool completely. Can be made a day ahead and stored in the fridge.
  2. Juice the citrus: Roll 8-10 limes and 4-5 lemons on the counter before cutting to release more juice. Strain through a fine-mesh sieve to catch seeds. You need 2 cups lime juice and 1 cup lemon juice.
  3. Mix the punch base: In a large pitcher or mixing bowl, combine the pineapple juice, lime juice, lemon juice, and cooled simple syrup. Stir well. Add green food coloring one drop at a time, stirring after each addition, until you reach an electric green color (start with 5-6 drops).
  4. Chill everything: Transfer the punch base to the refrigerator and chill for at least 2 hours, or overnight. Also chill the ginger ale.
  5. Set up serving station: Place your punch bowl or cauldron on a sturdy table. Ensure nothing above it could be damaged by fog.
  6. Combine punch and ginger ale: Just before serving, pour the chilled punch base into the serving bowl. Slowly add the chilled ginger ale. Stir gently.
  7. Add dry ice: Wearing thick oven mitts or insulated gloves, use tongs to carefully place 2-3 pieces of dry ice (each about the size of a golf ball) into the punch. Do not use more than this.
  8. Monitor and refresh: The dry ice fog will last about 10-15 minutes per batch. As it dissipates, add 1-2 more pieces of dry ice to keep the effect going. Never add dry ice while someone is drinking from the bowl.
  9. Add garnishes: Float lime slices on the surface. Drop in plastic spiders or gummy worms for a creepy touch.

Notes

Do not touch dry ice with bare skin. Never seal the container with dry ice inside. Cold punch slows dry ice sublimation, making fog last longer. Break dry ice into golf-ball-sized pieces for consistent fog. Test the fog effect before guests arrive. Keep dry ice in a cooler with the lid slightly open until ready to use.
