  • 2 pounds beef stew meat or sirloin tips, trimmed and cut into bite-sized pieces
  • 1/4 cup all-purpose flour (can substitute gluten-free flour)
  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 ounces cremini mushrooms, sliced (optional)
  • 4 cups prepared mashed potatoes (homemade or store-bought)

Instructions

  1. Toss the beef tips in the flour seasoned lightly with salt and pepper until evenly coated. Set aside.
  2. Heat butter in a large skillet over medium-high heat. Add the beef pieces in batches and brown on all sides until deep golden brown, about 8–10 minutes.
  3. In the same skillet, add the chopped onions and cook until soft and translucent, about 4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Transfer browned beef, onions, and garlic to the slow cooker. If using mushrooms, add them now. Pour in beef broth and Worcestershire sauce. Sprinkle Italian seasoning, then season with additional salt and pepper to taste.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until beef is fork-tender and gravy is thick and flavorful.
  6. If the gravy is too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker. Cook on high for another 15 minutes until thickened. Taste and adjust seasoning if needed.
  7. While the beef finishes cooking, prepare mashed potatoes by boiling Yukon gold potatoes until tender, then mashing with a splash of cream and butter.
  8. Serve the beef tips and gravy over a bed of warm mashed potatoes. Garnish with fresh parsley or thyme if desired.

Notes

Do not skip browning the beef as it adds rich flavor and color to the gravy. Avoid lifting the slow cooker lid during cooking to maintain temperature and moisture. Use cornstarch slurry to thicken gravy if needed. This dish tastes better the next day after flavors meld.
