A quick and indulgent comfort food recipe featuring crispy fries topped with smoky smoked brisket and a silky creamy cheese sauce, perfect for game day or casual gatherings.

Ingredients

Scale
  • 4 cups frozen French fries (about 900 g)
  • 2 cups smoked brisket, shredded or chopped (about 300 g)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour (or gluten-free flour)
  • 1 ½ cups whole milk (or dairy-free milk like oat milk)
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • ¼ cup BBQ sauce (60 ml)
  • 2 stalks green onions, thinly sliced
  • Optional toppings: jalapeño slices, crispy bacon bits, diced tomatoes

Instructions

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C). Spread frozen fries evenly on a parchment-lined baking sheet or arrange in air fryer basket. Bake or air fry for 20-25 minutes, flipping halfway through, until golden and crispy.
  2. Warm shredded brisket gently in a small pan over low heat or microwave for about 2 minutes. Add a splash of BBQ sauce or broth if dry.
  3. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for about 1 minute to form a roux.
  4. Slowly pour in milk while whisking constantly to prevent lumps. Continue whisking until sauce thickens, about 4-5 minutes.
  5. Remove pan from heat and stir in shredded cheddar and Monterey Jack cheeses until melted and smooth. Season with garlic powder, salt, and pepper. Adjust consistency with more milk if needed.
  6. Arrange hot fries on a serving platter. Spread warmed brisket evenly over fries. Drizzle with creamy cheese sauce and BBQ sauce.
  7. Sprinkle sliced green onions and optional toppings like jalapeño slices or bacon bits on top.
  8. Serve immediately while cheese sauce is warm and fries are crispy.

Notes

If cheese sauce thickens too much, gently rewarm with a splash of milk and whisk until smooth. Avoid overcrowding fries to keep them crispy. Use a tangy, smoky BBQ sauce for best flavor balance. Leftover brisket can be kept moist with a splash of broth or BBQ sauce when reheating.
