Instructions

  1. Heat 3 tablespoons of unsalted butter in a large skillet over medium-low heat. Add the thinly sliced yellow onions and a pinch of salt. Stir frequently for about 25-30 minutes until the onions turn a deep golden brown and smell sweet.
  2. Add the minced garlic during the last 2 minutes along with 1 teaspoon Worcestershire sauce and ¼ teaspoon black pepper. Stir well and remove from heat. Let cool slightly.
  3. In a medium bowl, combine 8 ounces of softened cream cheese, 1½ cups shredded sharp cheddar, and ¼ cup grated Parmesan. Blend until smooth and creamy. Taste and adjust seasoning with salt and pepper if needed.
  4. Fold the caramelized onion mixture gently into the cheese blend until evenly distributed. Add 2 tablespoons finely chopped chives and 1 tablespoon parsley if using, mixing lightly to combine.
