Refreshing Watermelon Mint Margarita

A simple, fresh, and perfectly balanced summer cocktail combining juicy watermelon, cool mint, lime, and tequila for a refreshing drink that’s easy to make and crowd-pleasing.

  • 4 cups cubed fresh watermelon (about 600 grams)
  • 1215 fresh mint leaves, plus extra for garnish
  • 2 ounces (60 ml) tequila blanco
  • 1 ounce (30 ml) fresh lime juice (about one large lime)
  • 1 ounce (30 ml) simple syrup
  • Ice cubes
  • Coarse salt or Tajin for rimming the glass (optional)

Instructions

  1. Place the cubed watermelon in a blender and pulse until smooth, about 30 seconds. For a smoother texture, strain the puree through a fine mesh strainer to remove pulp and seeds. You should have about 1 to 1½ cups (240-360 ml) of juice.
  2. In a cocktail shaker, add the mint leaves and simple syrup. Gently muddle to release the oils without pulverizing the leaves.
  3. Add tequila, fresh lime juice, and watermelon juice to the shaker. Fill with about 1 cup (240 ml) of ice cubes.
  4. Shake vigorously for 15-20 seconds until the outside of the shaker feels cold and frosty.
  5. Rub a lime wedge around the rim of your glass and dip it into coarse salt or Tajin. Fill the glass with fresh ice.
  6. Strain the margarita into the prepared glass. Garnish with a sprig of fresh mint and a small watermelon wedge.

Notes

Do not over-muddle the mint to avoid bitterness. Use ripe, juicy watermelon for best flavor. Chill watermelon juice, glasses, and shaker for optimal taste. Adjust sweetness with simple syrup or lime juice to balance tartness. For a non-alcoholic version, substitute tequila with sparkling water or lemon-lime soda. For a frozen variation, blend all ingredients with ice until slushy.
