Refreshing Frozen Peach Margarita Popsicles

A quick and easy adult frozen treat combining fresh peaches, tequila, lime, and agave syrup for a perfectly balanced, refreshing summer popsicle.

Ingredients

  • 3 large ripe peaches, peeled and pitted
  • 1 cup (240 ml) tequila blanco
  • 1/4 cup (60 ml) fresh lime juice
  • 23 tablespoons agave syrup
  • 1/2 cup (120 ml) water
  • Pinch of sea salt
  • Optional: fresh mint leaves for blending or garnishing
  • Optional: coarse salt for rimming popsicle molds

Instructions

  1. Peel and pit the peaches, then chop into chunks. To peel easily, score the peach skin and dip in boiling water for 30 seconds, then plunge into ice water.
  2. In a blender, combine peach chunks, tequila, fresh lime juice, agave syrup, water, and sea salt. Blend on high until smooth but with a bit of texture. Add mint leaves if using.
  3. Taste the mixture and adjust sweetness or acidity by adding more agave syrup or lime juice as needed.
  4. If desired, dip the tops of popsicle molds in lime juice, then into coarse salt to rim.
  5. Pour the mixture into popsicle molds, leaving space at the top for expansion. Insert sticks and freeze for at least 6 hours or overnight until solid.
  6. To unmold, briefly run warm water over the outside of molds or dip bottoms in warm water. Gently pull on sticks and serve immediately.

Notes

Keep alcohol content moderate to ensure popsicles freeze solid. Use silicone molds for easier unmolding. Adjust sweetness and acidity to taste. Freeze overnight for best texture. If popsicles are too icy, reduce water or add a splash more tequila next time.
