A quick and easy honey garlic salmon bowl with perfectly seared salmon, fresh veggies, and rice, ready in just 20 minutes. Perfect for busy weeknights.

Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons olive oil or avocado oil
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, jasmine, or basmati)
  • 1 medium cucumber, sliced
  • 1 medium avocado, sliced
  • 1/2 cup shelled edamame (thawed if frozen)
  • 1 medium carrot, shredded or julienned
  • 23 green onions, sliced
  • 1 tablespoon sesame seeds (toasted)
  • Fresh cilantro (optional, for garnish)
  • Red pepper flakes or sriracha (optional, for heat)
  • Pickled ginger (optional)
  • Nori strips (optional)

Instructions

  1. Start your rice first if cooking fresh. If using leftover rice, warm it up.
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, and sesame oil. Set aside.
  3. Prep your veggies: slice cucumber, avocado, shred carrots, thaw edamame, and slice green onions.
  4. Pat salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
  5. Heat a large non-stick or cast-iron skillet over medium-high heat. Add olive or avocado oil and heat until shimmering.
  6. Place salmon fillets skin-side down (if using skin-on) in the hot pan. Cook undisturbed for 4 minutes until skin is golden and crispy.
  7. Carefully flip the salmon and cook for another 2-3 minutes on the other side, until opaque and flaky (internal temperature of 125°F for medium-rare or 145°F for well-done).
  8. Reduce heat to low. Pour the honey garlic sauce into the pan around the salmon. Let it bubble and thicken for about 30 seconds. Flip salmon to coat both sides in the glaze.
  9. Assemble bowls: Divide warm rice between two bowls. Arrange cucumber, avocado, shredded carrots, and edamame around the edges. Place a glazed salmon fillet in the center. Drizzle any remaining sauce over the top.
  10. Garnish with sliced green onions, sesame seeds, and fresh cilantro if using. Add sriracha or red pepper flakes for heat. Serve immediately.

Notes

Pat salmon dry for best sear. Keep heat low when adding honey garlic sauce to prevent burning. Double the sauce for extra drizzling. Store leftovers separately; salmon keeps up to 2 days in fridge.
