This quick healthy turkey and zucchini skillet dinner is a one-pan meal that comes together in about 25 minutes. Ground turkey stays juicy, zucchini keeps its bite, and the whole dish is packed with flavor without complicated ingredients.

  • 2 medium zucchini, diced into half-inch pieces (about 3 cups)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil (avocado oil works too)
  • 1 teaspoon salt (kosher salt preferred)
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon dried oregano (Mediterranean oregano has the best flavor)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional, for heat lovers)
  • 1/4 cup chicken broth (low sodium preferred)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • Grated Parmesan cheese for serving (optional but highly recommended)

Instructions

  1. Prep all ingredients first. Dice the onion, mince the garlic, chop the zucchini into uniform half-inch pieces. Measure out your spices.
  2. Heat your skillet over medium-high heat for a full 2 minutes. Add 1 tablespoon of olive oil and swirl to coat.
  3. Add the ground turkey to the hot pan. Break it up into large chunks. Do not touch it for 3 to 4 minutes to develop a golden-brown crust.
  4. Flip the turkey pieces and cook for another 2 to 3 minutes until browned on the other side. Break the meat into smaller crumbles. Transfer cooked turkey to a plate and set aside.
  5. Reduce heat to medium and add the remaining 1 tablespoon of olive oil. Add the diced onion and cook for 3 to 4 minutes, stirring occasionally, until translucent and starting to brown.
  6. Add the minced garlic and cook for 30 seconds, stirring constantly.
  7. Add the diced zucchini to the pan. Sprinkle with a pinch of salt. Cook for 4 to 5 minutes, stirring occasionally, until tender but still has some bite.
  8. Return the cooked turkey to the skillet. Add the salt, pepper, oregano, smoked paprika, and red pepper flakes if using. Stir and cook for 1 minute.
  9. Pour in the chicken broth and scrape the bottom of the pan to release any stuck bits. Let simmer for 2 minutes until slightly reduced.
  10. Remove from heat. Stir in the fresh parsley and lemon juice. Taste and adjust seasoning if needed.
  11. Serve immediately with grated Parmesan cheese on top if desired.

Notes

Do not overcrowd the pan; cook turkey in batches if doubling. Pat zucchini dry after dicing to help it brown. Season in layers for deeper flavor. Let the meat rest after browning. Use fresh garlic for best results. If zucchini releases too much liquid, cook an extra minute or two to evaporate.
