  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) whole milk (or almond milk for dairy-free)
  • 1/4 cup (60ml) vegetable oil
  • 1/3 cup (about 50g) rainbow sprinkles (jimmies preferred)
  • Gel food coloring (red, blue, green, yellow), a few drops each
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (56g) unsalted butter, softened
  • 1 cup (120g) powdered sugar, sifted
  • 1 teaspoon vanilla extract (for filling)
  • Pinch of salt (for filling)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch jelly roll pan with parchment paper, leaving overhang for easy removal. Lightly grease parchment.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat eggs and granulated sugar on high speed for about 5 minutes until tripled in volume and pale.
  4. Gently fold in vanilla extract, milk, and vegetable oil.
  5. Gradually fold in the sifted flour mixture in three additions, folding gently to keep batter airy.
  6. Divide batter evenly into 4 small bowls. Add a few drops of gel food coloring to each and mix until uniform.
  7. Spoon dollops of each colored batter randomly into the prepared pan, alternating colors. Swirl gently with a butter knife or skewer to create tie-dye effect without overmixing.
  8. Sprinkle rainbow sprinkles evenly over the top and gently press into batter.
  9. Bake for 12-15 minutes until cake springs back lightly and a toothpick comes out clean. Avoid overbaking.
  10. Invert warm cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment paper. Roll cake and towel together tightly from one short end. Let cool completely rolled up.
  11. Beat cream cheese and butter until smooth. Gradually add powdered sugar, vanilla extract, and salt, beating until fluffy.
  12. Unroll cooled cake and spread cream cheese filling evenly over surface with an offset spatula.
  13. Roll cake back up without towel, wrap tightly in plastic wrap, and chill in refrigerator for at least 1 hour.
  14. Slice into 1-inch (2.5 cm) pieces with a sharp serrated knife. Serve chilled or at room temperature.

Use gel food coloring to avoid thinning the batter and maintain vibrant colors. Roll the cake while warm with a towel dusted in powdered sugar to prevent cracks.
