Instructions

  1. Preheat your oven to 375°F (190°C). Line your muffin pan with paper liners or grease the cups thoroughly.
  2. Make the streusel topping: In a small bowl, combine 1/2 cup flour, 1/4 cup packed brown sugar, 2 tablespoons granulated sugar, 1/2 teaspoon pumpkin pie spice, and a pinch of salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the dry ingredients until the mixture looks like coarse sand with some pea-sized butter pieces. Set the bowl in the fridge while you make the muffin batter.
  3. Mix the dry ingredients: In a medium bowl, whisk together 2 cups flour, 1 cup granulated sugar, 1/2 cup packed brown sugar, 2 teaspoons pumpkin pie spice, 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt.
  4. Mix the wet ingredients: In a large bowl, whisk together 1 cup pumpkin puree, 2 room temperature eggs, 1/2 cup vegetable oil, 1/4 cup milk, and 1 teaspoon vanilla extract until smooth.
  5. Combine wet and dry ingredients: Pour the dry ingredients into the wet ingredients. Use a spatula or wooden spoon to fold everything together gently. Stir just until you no longer see streaks of flour—about 10 to 12 strokes. A few small lumps are fine.
  6. Fold in the chocolate chips: Add 1 cup of semi-sweet chocolate chips to the batter and fold them in with a few gentle strokes. Reserve about 2 tablespoons of chocolate chips to press into the tops of the muffins before baking.
  7. Fill the muffin cups: Use a cookie scoop or spoon to divide the batter evenly among the 12 muffin cups. Each cup should be about three-quarters full.
  8. Add the streusel: Retrieve the streusel from the fridge. Sprinkle a generous amount over each muffin, pressing it down gently so it sticks to the batter. Use all the streusel.
  9. Press extra chocolate chips on top: Take those reserved chocolate chips and press a few into the streusel on each muffin.
  10. Bake for 18-22 minutes until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.
  11. Cool in the pan for 5 minutes. Remove the pan from the oven and let it sit on a cooling rack for 5 minutes.
