These non-alcoholic champagne jello shots are a festive, bubbly treat that everyone can enjoy. Made with sparkling white grape juice, they have a light, ethereal texture and a crisp, sweet flavor that’s perfect for New Year’s Eve or any celebration.

  • 1 ½ cups sparkling white grape juice (chilled)
  • 2 tablespoons unflavored gelatin powder (about 2 packets)
  • 3 tablespoons granulated sugar
  • Optional: 2-3 drops gold or pink food coloring
  • For garnish (optional): fresh raspberries or pomegranate seeds, edible glitter or gold luster dust, mint sprigs

Instructions

  1. Chill the sparkling juice: Place the bottle of sparkling white grape juice in the fridge for at least 2 hours before you start. The colder it is, the more carbonation it holds.
  2. Bloom the gelatin: Pour ½ cup of the chilled sparkling juice into a small saucepan. Sprinkle the 2 tablespoons of gelatin powder evenly over the surface. Let it sit for 5-7 minutes without stirring.
  3. Gently heat the gelatin mixture: Place the saucepan over low heat. Whisk constantly as the gelatin melts into the juice. This takes about 2-3 minutes. Do not let it boil.
  4. Add the sugar: Once the gelatin is fully dissolved, whisk in the 3 tablespoons of sugar. Continue whisking until the sugar is completely dissolved, about 1 minute.
  5. Combine with remaining juice: Remove the saucepan from heat. Pour the gelatin mixture into a clean liquid measuring cup. Slowly pour in the remaining 1 cup of chilled sparkling juice. Stir gently with a whisk or fork. If using food coloring, add 2-3 drops now and stir once or twice.
  6. Fill the shot glasses: Arrange your shot glasses on a baking sheet. Use a dropper, small funnel, or a liquid measuring cup with a spout to fill each glass about ¾ full.
  7. Add garnish (optional): If using fresh raspberries or pomegranate seeds, drop one into each glass now. If using edible glitter, wait until the jello is set to sprinkle it on top.
  8. Pop surface bubbles: Use a toothpick to gently pop any bubbles that have formed on the surface of the jello.
  9. Chill until set: Place the baking sheet in the refrigerator. Let the shots set for at least 4 hours, but overnight is better.
  10. Serve and enjoy: When ready to serve, remove the shots from the fridge. If using silicone molds, gently pop them out onto a serving platter. Garnish with a dusting of edible glitter or a tiny mint sprig. Serve immediately, or keep them chilled until the party starts.

Notes

Keep everything cold to preserve carbonation. Do not over-whisk. Use a dropper for filling. Make them the night before for best results. Do not freeze to speed up setting.
