  • 8 slices deli turkey breast (about 68 ounces)
  • 4 slices Swiss cheese
  • 4 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 4 leaves green leaf lettuce
  • 8 slices ripe tomato (about 12 medium tomatoes)
  • 4 slices red onion (optional)
  • Salt and black pepper to taste
  • Butter or olive oil for toasting

Instructions

  1. Slice each croissant in half horizontally using a serrated knife.
  2. Heat a small skillet or griddle over medium heat. Add a tiny pat of butter or a drizzle of olive oil. Place the croissant halves cut-side down in the skillet. Toast for 1-2 minutes until golden brown and crisp. Set aside to cool slightly.
  3. While the croissants cool, pat the lettuce leaves and tomato slices dry with paper towels to absorb excess moisture.
  4. In a small bowl, mix the mayonnaise and Dijon mustard together until smooth.
  5. Spread a generous layer of the mayo-mustard mixture on the cut side of each toasted croissant bottom, covering the entire surface to the edges.
  6. Fold the turkey slices and place them evenly on the bottom half of each croissant, using about 2 slices per sandwich, overlapping slightly.
  7. Place one slice of Swiss cheese on top of the turkey on each sandwich.
  8. Place one lettuce leaf on top of the cheese on each sandwich. Then add 2 tomato slices per sandwich. If using red onion, add a slice or two now. Season lightly with salt and pepper.
  9. Place the top half of the croissant on each sandwich, cut-side down. Press down gently to secure everything.
  10. If packing for later, wrap each sandwich tightly in aluminum foil or parchment paper. Let them rest at room temperature for 5-10 minutes before serving, or refrigerate for up to 4 hours.

The barrier method is key: toasting the croissant and using a thick spread creates two layers of protection against moisture. Patting veggies dry is non-negotiable. For best results, use all-butter croissants and day-old croissants for packing. Do not microwave leftovers.
