  • 2 teaspoons baking powder

  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla bean paste
  • Zest of 1 medium lemon
  • 1/2 cup (120 ml) whole milk, room temperature
  • Powdered sugar for dusting or glaze (optional)
  • Optional: mini chocolate chips or fresh berries
  • Optional: a few drops almond extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your mini bundt cake pan thoroughly.
  2. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla bean paste and lemon zest.
  6. Add the dry ingredients to the wet mixture in three additions, alternating with the milk, beginning and ending with the dry ingredients. Mix gently after each addition just until combined.
  7. If using, fold in mini chocolate chips or fresh berries gently.
  8. Divide the batter evenly among the six mini bundt cups, filling each about 2/3 full.
  9. Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Let the cakes cool in the pan for 10 minutes, then invert onto a cooling rack to cool completely.
  11. Optionally, dust with powdered sugar or drizzle a simple glaze made from powdered sugar and lemon juice.
  12. Place each mini bundt cake in a gift box and tie with ribbon or twine.

Notes

Grease pans thoroughly to prevent sticking. Use room temperature eggs and milk for better mixing. Do not overmix batter to keep cakes tender. Let cakes cool before removing from pans to avoid crumbling. Cakes keep well for 3 days at room temperature and freeze up to 2 months.
