Ingredients

Scale
  • 1 ½ cups all-purpose flour (190 grams)
  • ½ cup granulated sugar (100 grams)
  • ½ cup unsalted butter (113 grams), softened
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 8 oz cream cheese (225 grams), softened
  • ¾ cup powdered sugar (90 grams)
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream or whole milk (optional)
  • 1 cup fresh strawberries, sliced
  • ½ cup fresh blueberries
  • ½ banana, sliced (optional)

Instructions

  1. Prepare the Sugar Cookie Dough: In a medium bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3 to 4 minutes with an electric mixer.
  2. Add Egg and Vanilla: Beat in the large egg and vanilla extract until fully combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring just until incorporated. Avoid overmixing.
  5. Chill the Dough: Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
  6. Preheat Oven and Prepare Baking Sheet: Set oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  7. Roll and Cut Dough: On a lightly floured surface, roll out the dough to about ¼-inch (6 mm) thickness. Use a 3-inch round cookie cutter to cut out mini pizza bases. Place them evenly spaced on the prepared baking sheet.
  8. Bake Cookies: Bake for 10-12 minutes or until edges just start to turn golden. Watch closely to avoid overbaking.
  9. Cool Completely: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool fully before frosting.
  10. Make the Cream Cheese Frosting: Beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until creamy. If frosting is too thick, add heavy cream or milk one teaspoon at a time until spreadable.
  11. Assemble the Mini Pizzas: Spread a generous layer of cream cheese frosting on each cooled cookie. Arrange sliced strawberries in stripes for the red parts of the flag. Place blueberries in the upper left corner square to represent the stars. Use banana slices or leave small strips of frosting between red and blue fruits to mimic the white stripes.
  12. Chill Before Serving: Refrigerate the assembled mini pizzas for 15-20 minutes to let the frosting set slightly and the flavors meld.

Notes

Chill the dough before rolling to improve texture. Pat fruit dry before placing on frosting to prevent soggy crust. Use room temperature cream cheese for smooth frosting. Assemble close to serving time to keep fruit fresh. Store leftovers in an airtight container in the refrigerator for up to 2 days.
