Perfect Grilled Peach & Burrata Salad Recipe

A simple yet elegant summer salad featuring warm, caramelized grilled peaches, cool and creamy burrata, peppery arugula, and a sweet honey dressing. It’s quick to make and perfect for entertaining.

Ingredients

  • 34 ripe but firm peaches
  • 8 oz burrata cheese (1 large ball or 2 small)
  • 34 tablespoons honey
  • 45 cups baby arugula
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze (optional but recommended)
  • Flaky sea salt (like Maldon)
  • Fresh basil leaves (a handful)
  • Black pepper (freshly cracked)

Instructions

  1. Preheat your grill or grill pan over medium-high heat for about 5 minutes.
  2. Wash and dry the peaches. Cut them in half, remove the pit, and cut into thick wedges (about 1/2 to 3/4 inch thick).
  3. Brush the cut sides of the peaches with about 1 tablespoon of olive oil and season lightly with a pinch of salt.
  4. Grill the peaches cut-side down for 2-3 minutes without moving them. Flip and grill for another 1-2 minutes on the skin side. Remove and set aside.
  5. In a small bowl, whisk together the remaining 2 tablespoons of olive oil, 2 tablespoons of honey, and a pinch of salt and pepper to make the dressing.
  6. Spread the arugula on a large serving platter. Drizzle about half of the dressing over the greens and toss gently.
  7. Arrange the grilled peaches over the arugula.
  8. Carefully tear the burrata into large pieces and scatter over the salad, or place it whole in the center.
  9. Drizzle the remaining dressing over everything. If using, drizzle the balsamic glaze in a zigzag pattern.
  10. Finish with a generous pinch of flaky sea salt, a few cracks of black pepper, and scatter fresh basil leaves. Drizzle the last tablespoon of honey over the burrata and peaches.
  11. Serve immediately.

Notes

Let the burrata sit at room temperature for 20-30 minutes before serving for the best creamy texture. Don’t overcook the peaches; they should be warm and charred but still hold their shape. Season in layers: a pinch of salt on the peaches before grilling, salt in the dressing, and flaky salt at the end. For best results, serve immediately.
