Perfect Cranberry Brie Bites: Easy 30-Min Appetizer

These cranberry brie bites are a quick and easy appetizer made with flaky puff pastry, creamy brie, tart cranberry sauce, and a honey thyme drizzle. Ready in under 30 minutes, they’re perfect for holiday parties, game days, or any gathering.

  • 1 sheet frozen puff pastry, thawed
  • 4 oz brie cheese, rind removed and cut into 24 small cubes (about ½-inch each)
  • ½ cup whole berry cranberry sauce
  • 3 tablespoons honey
  • 2 teaspoons fresh thyme leaves, plus extra sprigs for garnish
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Lightly grease a 24-cup mini muffin tin with butter or non-stick spray. Set aside.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Using a sharp knife or pizza cutter, cut the sheet into 24 equal squares—about 2 inches each.
  3. Gently press each square into a mini muffin cup, making sure the corners stick up slightly. Don’t press too hard or the pastry will tear.
  4. Place one cube of brie (rind removed) into each pastry cup.
  5. Top each brie cube with about ½ teaspoon of cranberry sauce.
  6. In a small bowl, beat the egg with 1 tablespoon of water. Using a pastry brush, lightly brush the exposed edges of the puff pastry.
  7. Bake for 15-18 minutes, until the pastry is puffed and golden and the brie is bubbly. Rotate the pan halfway through for even browning.
  8. While the bites bake, make the honey thyme drizzle. In a small saucepan over low heat, warm the honey with the fresh thyme leaves. Stir gently for about 2 minutes, until the honey is runny and fragrant. Do not let it boil. Remove from heat and let it sit while the bites finish baking.
  9. Let the bites cool in the pan for 3-4 minutes. Then, using a small spoon, drizzle a little honey thyme mixture over each bite. Sprinkle with flaky sea salt and a few fresh thyme leaves for garnish.
  10. Serve warm.

Notes

Don’t skip chilling the brie—cold brie holds its shape longer in the oven. Watch your oven closely; the difference between perfect and overdone is about 90 seconds. Let the bites rest in the pan for 3-4 minutes before removing. Make the honey thyme drizzle fresh for best results.
