  • 3 medium ripe bananas (about 1½ cups / 340 grams mashed)
  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (50 grams) light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups (190 grams) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon (optional but recommended)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on two long sides.
  2. In a light-colored skillet or saucepan over medium heat, melt the butter. Continue cooking, swirling occasionally, until the butter foams, then the foam subsides and tiny brown specks appear and it smells nutty (5-7 minutes). Immediately remove from heat and pour into a heatproof bowl to cool for about 5 minutes.
  3. In a large bowl, mash the bananas with a fork until mostly smooth with a few lumps.
  4. Add granulated sugar, brown sugar, eggs, and vanilla to the mashed bananas. Whisk until well combined. Slowly pour in the slightly cooled browned butter and whisk until fully incorporated.
  5. In a separate medium bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
  6. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to gently fold until just combined (a few lumps are fine). Do not overmix.
  7. Pour the batter into the prepared loaf pan and spread evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly after 40 minutes, tent loosely with foil.
  8. Let the bread cool in the pan on a wire rack for 10 minutes. Then use the parchment overhang to lift the bread out and transfer to the rack to cool completely (at least 1 hour) before slicing.

Notes

Use a light-colored pan to easily see the butter browning. Do not overmix the batter to avoid a tough loaf. Let the bread cool completely before slicing to prevent a gummy texture. The bread can be stored at room temperature for up to 4 days or frozen for up to 3 months.
