  • 4 celery stalks (diced small, about 2 cups)

  • 6 cups crumbled cornbread (from 2 boxes)
  • 4 cups day-old white bread (cubed or torn into small pieces)
  • 4 cups chicken broth (low-sodium)
  • 2 large eggs (beaten)
  • 1 tablespoon poultry seasoning (Bell’s preferred)
  • 1 tablespoon dried sage (rubbed sage preferred)
  • 1 teaspoon black pepper (freshly ground)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon cayenne pepper (optional)

Instructions

  1. Make the cornbread: Preheat oven to 400°F. Grease an 8×8 pan with butter. Mix both boxes of Jiffy mix, 2 eggs, and 2/3 cup milk until just combined. Pour into pan and bake 18-22 minutes until golden and toothpick comes out clean. Cool completely, then crumble. For best results, make a day ahead and let dry out.
  2. Prep the bread: Tear or cut day-old white bread into 1/2-inch cubes (about 4 cups). Spread on a baking sheet and let dry out while working on vegetables. If short on time, toast at 300°F for 5-7 minutes.
  3. Sauté vegetables: In a large skillet or Dutch oven, melt 1 cup butter over medium heat. Add onions, celery, and bell pepper (if using). Cook 8-10 minutes until onions are translucent and vegetables softened. Add garlic and cook 1 minute more until fragrant.
  4. Combine everything: In a large mixing bowl, combine crumbled cornbread, dried white bread cubes, and sautéed vegetable mixture. Toss gently. In a separate bowl, whisk together chicken broth, beaten eggs, poultry seasoning, sage, black pepper, salt, and cayenne. Pour over bread mixture and stir gently until all bread is moistened. Mixture should be wet but not soupy (thick oatmeal consistency).
  5. Let it rest: Let mixture sit 10-15 minutes before baking to allow bread to absorb liquid. If too dry after resting, add more broth. If too wet, add more crumbled cornbread.
  6. Bake: Preheat oven to 375°F. Transfer mixture to a greased 9×13 baking dish and spread evenly. Bake uncovered 35-40 minutes until top is golden brown and edges are crispy. Center should be set but slightly jiggly. If top browns too quickly, tent loosely with foil for last 10 minutes.
