  • 2 cups sparkling wine (dry, such as cava or brut champagne)
  • 2 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon honey or maple syrup (for rim)
  • 1 ounce bourbon or whiskey (optional)
  • Ice cubes (optional)
  • Apple slices or cinnamon sticks (for garnish)

Instructions

  1. Mix 2 tablespoons of granulated sugar with 1 tablespoon of ground cinnamon in a small shallow dish.
  2. Dip the rim of a glass into a small dish of honey, maple syrup, or water to wet it.
  3. Gently dip the wet rim into the cinnamon sugar mixture, rotating to coat evenly. Tap off excess and set aside.
  4. In a small pitcher or measuring cup, combine 1 cup of apple cider with 1 ounce of bourbon (if using). Stir gently.
  5. Fill the prepared glass about one-third full with the cider mixture. Add ice cubes if desired.
  6. Slowly pour sparkling wine into the glass, filling it the rest of the way. Pour gently to preserve bubbles.
  7. Garnish with a thin apple slice or cinnamon stick. Serve immediately.

Notes

Chill all ingredients before starting to preserve bubbles. The cinnamon sugar rim is essential for flavor and presentation; rim glasses just before serving. For a non-alcoholic version, use sparkling apple cider or sparkling water. The cider mixture can be made ahead and stored in the fridge for up to 3 days.
