  • 2 medium bananas, peeled and sliced
  • Optional: 2 tablespoons apricot jam (warmed)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, and optional almond extract until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Transfer dough to the lined baking sheet and flatten into a 10-12 inch circle about ½ inch thick.
  7. Bake for 15-18 minutes until edges are golden brown but center is still slightly soft.

  9. In a clean bowl, beat cream cheese and butter until smooth and creamy.

  11. Spread cream cheese frosting evenly over the cooled cookie with an offset spatula.
  12. Arrange blueberries in the top left corner to form the blue square with stars.
  13. Alternate rows of sliced strawberries and banana slices to create red and white stripes.
  14. Optional: Warm apricot jam and brush gently over the fruit for shine.
  15. Chill the fruit pizza in the refrigerator for at least 30 minutes before serving.
