Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with liners or lightly grease it.
  2. Grate about 1 ½ cups (150g) of zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. In a large bowl, whisk together 1 ½ cups (190g) all-purpose flour, ½ cup (50g) unsweetened cocoa powder, 1 teaspoon baking powder, ½ teaspoon baking soda, and ¼ teaspoon salt until evenly combined.
  4. In a separate bowl, whisk ¾ cup (150g) granulated sugar and ⅓ cup (80ml) vegetable oil until smooth. Add 2 large eggs, one at a time, beating well after each. Stir in 1 teaspoon vanilla extract.
  5. Fold the squeezed zucchini into the wet mixture, distributing it evenly.
  6. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing.
  7. Fold in ½ cup (90g) dark chocolate chips gently into the batter.
  8. Spoon batter evenly into the prepared muffin tin, filling each about ⅔ full.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  10. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
