Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on two opposite sides.

  4. Prepare the cheesecake layer: In a medium bowl, beat softened cream cheese and Greek yogurt until smooth. Add sugar and beat until incorporated. Add egg, vanilla, and flour, mixing on low speed until just combined. Batter should be smooth and silky.
  5. Assemble the bars: Pour cheesecake batter over slightly cooled crust and spread evenly. Tap pan gently on counter to release air bubbles.
  6. Bake for 25–30 minutes, until edges are set and center is slightly jiggly. Do not overbake.
  7. Cool completely: Remove pan from oven and cool on a wire rack for 30 minutes. Then refrigerate for at least 3 hours, or overnight.
  8. Make the frosting: Beat cream cheese and butter together until smooth. Add powdered sugar and vanilla, beat on low until combined. Add milk one tablespoon at a time until spreadable consistency. Spread over chilled cheesecake layer.
  9. Slice and serve: Use parchment handles to lift bars out of pan. Slice into 9 or 16 squares. Wipe knife clean between cuts.
