A light and refreshing apple cider mimosa with a cinnamon sugar rim, perfect for fall brunches and gatherings. This easy cocktail balances tart apple cider with dry sparkling wine for a crisp, not-too-sweet drink.

  • 1 bottle (750 ml) sparkling wine or Champagne, chilled (Brut or Extra Brut recommended)
  • 1 ½ cups fresh apple cider, chilled
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup (optional)
  • Lemon wedge (for rimming glasses)
  • Ice (optional)
  • Thin apple slices, cinnamon sticks, or fresh rosemary sprigs (for garnish)

Instructions

  1. In a small shallow dish, combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Whisk with a fork until evenly blended.
  2. Run a lemon wedge around the rim of each glass. Immediately dip the rim into the cinnamon sugar mixture, twisting gently to coat evenly. Tap off any excess. Let the glasses sit for about 30 seconds so the rim sets.
  3. Ensure the sparkling wine and apple cider are well-chilled. If needed, place the bottle in an ice bath for 15 minutes.
  4. Pour ¼ cup (60 ml) of chilled apple cider into each prepared glass. If desired, add a tiny drizzle of honey or maple syrup for extra sweetness.
  5. Slowly pour the chilled sparkling wine into the glass, filling it almost to the top. Pour at an angle to preserve the bubbles. Use about ¾ cup (180 ml) of wine per glass.
  6. Stir gently once or twice with a long spoon or chopstick to combine. Do not overmix.
  7. Add a few ice cubes if desired (optional).
  8. Garnish with a thin apple slice, cinnamon stick, or fresh rosemary sprig. Serve immediately.

Notes

For best results, chill all ingredients thoroughly before making. Use a dry sparkling wine to balance the sweetness of the apple cider. Let the cinnamon sugar rim set for 30 seconds to prevent it from falling into the drink. Serve immediately for optimal bubbles.
