Instructions

  1. Rice the cauliflower by removing leaves and core, cutting into florets, and pulsing in a food processor until rice-like texture is achieved. Set aside.
  2. Prepare the sauce by whisking tamari, rice vinegar, toasted sesame oil, honey, and red pepper flakes in a medium bowl. Adjust to taste and set aside.
  3. Heat 1 tablespoon oil in a large skillet over medium heat. Add riced cauliflower, season with salt and pepper, and sauté for 5-7 minutes until tender but firm. Remove and keep warm.
  4. In the same skillet, heat 1 tablespoon oil over medium-high heat. Add chicken slices in a single layer and cook 3-4 minutes per side until golden and cooked through. Remove and set aside.
  5. Add garlic and ginger to the skillet and sauté for 30 seconds until fragrant. Add bell pepper, snap peas, and carrot; stir-fry for 3-4 minutes until crisp-tender.
  6. Return chicken to skillet with veggies. Pour sauce over and toss to combine. Cook for 2 minutes until flavors meld and sauce thickens slightly. Stir in green onions and baby spinach until spinach wilts (about 30 seconds).
  7. Serve the chicken stir-fry over warm cauliflower rice. Garnish with extra green onions or sesame seeds if desired.
