A quick and refreshing snack combining juicy watermelon, crumbly feta, and fresh mint on skewers. Perfect for summer entertaining or a light appetizer.

  • 4 cups watermelon, cut into 1-inch cubes (ripe, seedless)
  • 8 ounces feta cheese, cut into cubes similar size to watermelon
  • About 20 fresh mint leaves, whole, washed and patted dry
  • 1 tablespoon extra virgin olive oil (optional)
  • Pinch of freshly ground black pepper (to taste)
  • Wooden or bamboo skewers, 12-inch length (soaked in water for 10 minutes if grilling)

Instructions

  1. Cut watermelon into 1-inch cubes, about 4 cups (approximately 600 grams).
  2. Cut 8 ounces (about 225 grams) of feta into cubes of similar size and keep chilled until assembling.
  3. Gently rinse about 20 fresh mint leaves and pat dry.
  4. Thread one cube of watermelon, then a mint leaf (folded if large), followed by a feta cube, and finish with another mint leaf onto each skewer. Repeat 3 to 4 sets per skewer.
  5. Optionally, drizzle skewers with 1 tablespoon extra virgin olive oil and sprinkle with freshly ground black pepper.
  6. Chill skewers in the refrigerator for at least 15 minutes before serving.

Notes

Use ripe, seedless watermelon for best sweetness. Keep feta chilled until assembling to maintain shape. Soak skewers in water if grilling. Add olive oil and pepper just before serving to keep freshness. For dairy-free, substitute feta with marinated tofu. Fresh mint is recommended over dried for best flavor.
