  • 8 oz (225 g) fresh turkey breast slices, thinly sliced deli turkey, ideally low sodium
  • 8 oz (225 g) cream cheese, softened (full-fat recommended)
  • 2 tbsp fresh herbs (chopped parsley or chives)
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Freshly ground black pepper, to taste
  • Optional extras: slices of crisp cucumber or bell pepper, baby spinach leaves, pinch of smoked paprika

Instructions

  1. Soften the cream cheese by leaving it out at room temperature for about 30 minutes or microwave for 15 seconds to soften (not melt).
  2. In a mixing bowl, combine the softened cream cheese with chopped parsley or chives, garlic powder, onion powder, and freshly ground black pepper. Stir until creamy and evenly incorporated. Add a splash of milk if mixture is too stiff.
  3. Lay one tortilla flat on a cutting board. If dry or stiff, wrap in a damp paper towel and microwave for 10 seconds to make pliable.
  4. Spread an even, thin layer of the cream cheese mixture over the tortilla, leaving about a 1/2 inch border on the edges.
  5. Place turkey breast slices evenly over the cream cheese. Add optional veggies like spinach or cucumber if desired.
  6. Roll the tortilla tightly but gently from one edge to form a firm spiral.
  7. Wrap the rolled tortilla tightly in plastic wrap or parchment paper and chill in the refrigerator for at least 30 minutes to set the shape.
  8. Remove from fridge, unwrap, and slice into 1-inch thick rounds with a sharp knife. Arrange on a platter and serve immediately or refrigerate until ready to serve.

Chilling the rolls for at least 30 minutes is key to firm up the shape and make slicing easier. Use a sharp knife to avoid squishing the rolls. If the cream cheese mixture is too soft, add more cream cheese or chill longer. Tortillas can be warmed slightly to make rolling easier.
