Fresh Rainbow Pinwheel Wraps with Creamy Hummus

Colorful and healthy pinwheel wraps filled with fresh veggies and creamy hummus, perfect for a quick snack or light meal.

Ingredients

  • Large flour tortillas (10-inch/25 cm)
  • Hummus (about 1 cup/240 ml)
  • Red bell pepper, thinly sliced
  • Orange bell pepper, thinly sliced
  • Yellow bell pepper, thinly sliced
  • Grated carrot (1 medium)
  • Cucumber, peeled and julienned
  • Fresh baby spinach leaves (about 1 cup/30 g)
  • Fresh parsley, chopped (2 tbsp)
  • Fresh lemon juice (1 tbsp)
  • Salt and pepper to taste

Instructions

  1. Rinse all vegetables thoroughly. Thinly slice the red, orange, and yellow bell peppers into long strips about 1/4-inch (0.6 cm) thick. Peel and julienne the cucumber into similar lengths. Grate the carrot and chop the parsley finely. Set aside the baby spinach leaves.
  2. In a bowl, combine your hummus with 1 tablespoon fresh lemon juice. Add a pinch of salt and freshly ground black pepper. Stir until smooth and zesty.
  3. Lay one tortilla flat on a clean surface. Use a spoon or spatula to spread an even layer of the hummus mixture over the entire surface, leaving about a 1/2-inch (1.3 cm) border around the edges.
  4. Starting at one edge, place strips of bell peppers, cucumber, grated carrot, baby spinach leaves, and parsley in neat rows across the hummus-covered tortilla.
  5. Carefully roll the tortilla from the veggie side inward, keeping it as tight as possible without squeezing out the filling. Wrap with plastic wrap or parchment paper tightly to help it set. Refrigerate for at least 15 minutes to firm up.
  6. Remove from the fridge and unwrap. Using a sharp knife, cut the roll into 1-inch (2.5 cm) thick slices. Arrange on a platter with the colorful layers showing. Serve immediately or cover and refrigerate for later.

Notes

Warm tortillas for 10-15 seconds in the microwave wrapped in a damp paper towel if they feel dry to make rolling easier. Chill wraps before slicing to keep shape. Use a serrated knife for clean cuts. Avoid overfilling to prevent wraps from falling apart.
