  • 1 small jalapeño pepper, finely minced (seeds removed for milder heat)
  • ¼ cup fresh cilantro, chopped (stems removed)
  • 2 tablespoons red onion, finely diced
  • Juice of 1 lime (freshly squeezed)
  • 1 tablespoon extra virgin olive oil (optional)
  • ½ teaspoon salt (sea salt or kosher salt recommended)
  • Pinch of ground black pepper

Instructions

  1. Wash and dry all fresh produce: rinse peaches, jalapeño, and cilantro thoroughly under cold water and pat dry.
  2. Dice the peaches into small, roughly ½-inch pieces.
  3. Prepare the jalapeño by cutting off the stem, slicing in half, removing seeds if desired, and mincing finely.
  4. Chop the red onion finely and chop the cilantro leaves without stems.
  5. In a medium mixing bowl, gently toss the peaches, jalapeño, onion, and cilantro together.
  6. Add lime juice and olive oil (if using), then sprinkle salt and black pepper. Stir carefully to blend flavors without crushing the fruit.
  7. Taste and adjust seasoning with more salt or lime juice if needed. Add extra diced peach to mellow heat if salsa is too spicy.
  8. Cover and refrigerate for 15 to 30 minutes to let flavors meld before serving.
