  • 3 medium ripe peaches, diced
  • 1 medium jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey or agave syrup (optional)
  • 1/4 teaspoon salt
  • Pinch of black pepper

Instructions

  1. Wash and dry peaches, jalapeño, cilantro, and lime thoroughly.
  2. Remove peach pits and dice peaches into uniform 1/2-inch pieces.
  3. Cut off jalapeño stem, slice lengthwise, remove seeds if desired, and finely chop.
  4. Dice red onion into small, even pieces.
  5. Roughly chop cilantro leaves and tender stems to make about 1/4 cup packed.
  6. In a mixing bowl, combine diced peaches, jalapeño, onion, and cilantro.
  7. Add salt, black pepper, and honey or agave syrup if using; toss gently to combine.
  8. Squeeze 2 tablespoons of fresh lime juice over the mixture and stir gently.
  9. Let the salsa rest for 10–15 minutes at room temperature to allow flavors to meld before serving.

Notes

Use firm, ripe peaches to avoid mushy salsa. Adjust jalapeño seeds to control heat. Let salsa rest 10-15 minutes before serving for best flavor. Avoid vigorous mixing to keep peaches intact. Can substitute nectarines for peaches or serrano peppers for jalapeño for variation.
