A quick and easy summer salad featuring smoky grilled peaches paired with creamy burrata, fresh basil, and a tangy balsamic glaze. Perfect for a refreshing and elegant meal or side dish.

  • 3 medium ripe peaches, halved and pitted
  • 8 ounces (225g) burrata cheese
  • 1 cup loosely packed fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: toasted pine nuts or walnuts for crunch

Instructions

  1. Preheat your grill or grill pan to medium-high heat (~400°F/200°C), about 5 minutes.
  2. Rinse and dry peaches, slice in half and remove pits. Lightly brush cut sides with olive oil to prevent sticking.
  3. Place peaches cut-side down on the grill. Grill for 3-4 minutes until char marks appear and peaches begin to soften.
  4. Flip peaches and grill for another 2 minutes on the skin side until tender but not mushy.
  5. Arrange grilled peaches on a serving plate alongside torn or sliced burrata.
  6. Scatter fresh basil leaves over the top.
  7. Drizzle with extra virgin olive oil and balsamic glaze.
  8. Sprinkle sea salt and freshly cracked black pepper to taste.
  9. If using, sprinkle toasted pine nuts or walnuts for added crunch.
  10. Serve immediately while peaches are warm and burrata is creamy.

Notes

If peaches are not in season, substitute with grilled nectarines or figs, adjusting grilling time as needed. To avoid sogginess, blot excess moisture from peaches before plating. Let burrata sit at room temperature for 10 minutes before serving for best creaminess. For dairy-free, substitute burrata with firm tofu or creamy avocado spread and use a balsamic reduction for glaze.
