Fresh Grilled Nectarine Salad with Goat Cheese and Candied Pecans

A quick and easy summer salad featuring grilled nectarines, creamy goat cheese, and crunchy candied pecans tossed with mixed greens and a bright dressing.

Ingredients

  • 4 medium nectarines, halved and pitted
  • 4 ounces goat cheese, crumbled
  • 1 cup candied pecans
  • 5 cups mixed salad greens (arugula, baby spinach, butter lettuce)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or grill pan to medium-high heat (around 400°F / 200°C).
  2. Halve and pit the nectarines. Brush the cut sides lightly with olive oil.
  3. Place nectarines cut side down on the grill. Grill for 3-4 minutes until char marks appear and fruit softens slightly but still holds shape.
  4. Flip and grill the skin side for about 1 minute. Remove from grill and let cool slightly.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, honey, lemon juice, salt, and pepper to make the dressing.
  6. In a large bowl, combine mixed salad greens.
  7. Slice grilled nectarines into wedges and add to the greens.
  8. Sprinkle crumbled goat cheese and candied pecans over the salad.
  9. Drizzle the dressing over the salad and toss gently to coat without breaking the nectarines or crushing the goat cheese.
  10. Serve immediately while nectarines are still slightly warm.

Notes

Keep an eye on nectarines while grilling to avoid overcooking. Toast candied pecans first if making at home and cool completely before adding to salad. Toss salad just before serving to keep greens crisp.
