  • 1/4 cup honey
  • 12 fresh jalapeños, finely diced (remove seeds for less heat)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease muffin tin or line with paper liners.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk buttermilk, eggs, melted butter, and honey until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold with a rubber spatula until just combined; batter should be slightly lumpy.
  5. Fold in finely diced jalapeños.
  6. Spoon batter evenly into muffin cups, filling about 3/4 full.
  7. Bake for 16–20 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Brush tops with melted butter immediately after removing from oven.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool further. Serve warm or at room temperature.

Notes

Do not overmix the batter to keep muffins fluffy. Use room temperature eggs and buttermilk for best rise. Remove jalapeño seeds to control heat.
