  • 2 ½ cups (320 g) all-purpose flour, sifted
  • ¼ cup (50 g) granulated sugar
  • 2 ¼ tsp (one packet) active dry yeast
  • ¾ cup (180 ml) whole milk, warmed to about 110°F (43°C)
  • 4 tbsp (57 g) unsalted butter, softened
  • 1 large egg, room temperature
  • ½ tsp salt
  • 8 oz (225 g) cream cheese, softened
  • ⅓ cup (40 g) powdered sugar
  • 1 tsp vanilla extract
  • 2 medium fresh peaches, thinly sliced
  • 1 tbsp lemon juice
  • ½ tsp ground cinnamon (optional)
  • 2 tbsp raw honey, warmed slightly for drizzling

Instructions

  1. Activate the yeast by combining warm milk (110°F / 43°C) with active dry yeast and a pinch of sugar in a small bowl. Let sit for 5-7 minutes until frothy.
  2. In a large bowl or stand mixer, combine sifted flour, sugar, and salt. Add softened butter, egg, and yeast-milk mixture. Mix with dough hook on low for 5 minutes or knead by hand for 8-10 minutes until smooth and elastic.
  3. Shape dough into a ball, place in a greased bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  4. Beat cream cheese, powdered sugar, and vanilla extract in a medium bowl until smooth. Refrigerate until ready to use.
  5. Toss peach slices with lemon juice and cinnamon (if using) to prevent browning.
  6. Punch down risen dough and roll out on a floured surface into a 12×16 inch rectangle. Cut into 8 equal squares.
  7. Place about 2 tbsp cream cheese filling in the center of each square. Arrange peach slices over filling, slightly overlapping. Fold corners toward center, pressing lightly to seal but leaving fruit visible.
  8. Place danishes on parchment-lined baking sheet. Cover loosely and let rest for 20-30 minutes to puff.
  9. Preheat oven to 375°F (190°C). Bake danishes for 18-22 minutes until golden and puffed. Tent with foil if edges brown too quickly.
  10. Cool danishes on a rack for 10 minutes. Drizzle warm honey over each before serving.
