  • 1 (15 oz / 425 g) can black beans, rinsed and drained
  • 1 (15 oz / 425 g) can black-eyed peas, rinsed and drained
  • 1 cup fresh or frozen corn kernels (fresh preferred)
  • 1 medium red bell pepper, finely diced
  • 1 medium tomato, seeded and diced (Roma tomatoes recommended)
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup olive oil (extra virgin preferred)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lime juice, freshly squeezed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon honey or agave syrup
  • 1 large ripe avocado, peeled and pitted
  • 1/4 cup sour cream or Greek yogurt (or dairy-free coconut yogurt for vegan option)
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Heat a grill pan or cast-iron skillet over medium-high heat. Add 1 cup fresh corn kernels with no oil. Cook undisturbed for 3-4 minutes until charred on one side, then stir and cook another 2-3 minutes until smoky with blackened spots. Remove from heat and let cool slightly.
  2. In a medium bowl, combine rinsed black beans, black-eyed peas, diced red bell pepper, tomato, red onion, jalapeño (if using), and chopped cilantro. Add the charred corn once cooled and toss gently to mix.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, lime juice, ground cumin, smoked paprika, honey, salt, and pepper. Adjust seasoning to taste.
  4. Pour the dressing over the cowboy caviar base and toss gently until well coated. Cover and refrigerate for at least 30 minutes to let flavors meld. Can be made up to 6 hours ahead.
  5. In a food processor or blender, combine avocado, sour cream or Greek yogurt, lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy, scraping sides as needed. Adjust lime or salt to taste.
  6. Spoon the cowboy caviar into a serving bowl and drizzle or dollop avocado cream on top. Garnish with extra cilantro or smoked paprika if desired. Serve with tortilla chips, fresh veggies, or as a topping for grilled meats or tacos.

Notes

Use dry heat to char corn for best smoky flavor. Avoid overcrowding pan to prevent steaming. Add lime juice to avocado cream to prevent browning. Prepare cowboy caviar base up to 6 hours ahead; add avocado cream just before serving. If avocado cream is too thick, thin with water or more lime juice. Serve within 6 hours for best freshness.
