A quick and easy sautéed garlic scapes recipe with lemon butter and chili flakes, offering a fresh, buttery, and slightly spicy side dish perfect for spring and early summer meals.

  • 1 pound (450 grams) garlic scapes, trimmed and cut into 2-inch pieces
  • 3 tablespoons (45 grams) unsalted butter, softened
  • 2 tablespoons fresh lemon juice (about 1 small lemon)
  • 1/2 teaspoon chili flakes (adjust to taste)
  • Salt to taste (sea salt or kosher salt recommended)
  • 1 tablespoon (15 ml) olive oil (optional)

Instructions

  1. Rinse 1 pound (450 g) of garlic scapes under cold water to remove any dirt. Trim off the tough ends and cut the scapes into 2-inch (5 cm) pieces. (5 minutes)
  2. Place a large sauté pan over medium-low heat and add 3 tablespoons (45 g) of unsalted butter. Let it melt slowly, swirling to coat the bottom. Optionally add 1 tablespoon (15 ml) olive oil to prevent butter from browning too fast. (2 minutes)
  3. Toss the garlic scapes into the melted butter. Stir gently to coat every piece. Cook on medium-low heat, stirring occasionally, for about 6-8 minutes until softened but still bright green. (6-8 minutes)
  4. Sprinkle 1/2 teaspoon chili flakes over the scapes and stir well. Squeeze in 2 tablespoons (30 ml) fresh lemon juice, stirring quickly to combine. Season with salt to taste (about 1/4 to 1/2 teaspoon). Cook for another 1-2 minutes to meld flavors. (2 minutes)
  5. Remove from heat and transfer to a serving dish. Serve immediately.

Notes

Cook garlic scapes low and slow to bring out natural sweetness. Add lemon juice at the end to avoid grainy butter and dull color. Use unsalted butter to control salt level. Optionally add olive oil to prevent butter burning. If scapes are tough, add a splash of water or broth and cover briefly to steam. Avoid overcooking to keep bright green color and crisp texture.
