  • 1 pound garlic scapes, trimmed and cut into 2-inch pieces
  • 3 tablespoons unsalted butter
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil (optional)

Instructions

  1. Rinse the garlic scapes under cold water to remove any dirt. Trim off the tough ends and slice into roughly 2-inch pieces.
  2. Place a large skillet over medium heat and add olive oil (if using) and unsalted butter. Let the butter melt slowly until it foams but does not brown.
  3. Add the garlic scapes to the pan and stir gently to coat them in the melted butter. Spread them out evenly and cook for about 5-6 minutes until tender-crisp with slight browning on some edges. Lower heat if butter bubbles too aggressively or browns too fast.
  4. Sprinkle salt and freshly ground black pepper over the scapes and stir to blend the seasonings evenly.
  5. Add red chili flakes and stir quickly to distribute the heat. Adjust the amount to taste.
  6. Remove the pan from heat and squeeze fresh lemon juice over the scapes. Stir gently to combine.
  7. Serve immediately while warm.

Notes

To make garlic scapes extra tender, add a splash of water or broth after sautéing and cover the pan for 2 minutes to steam lightly. Use moderate heat to avoid burning the butter. Add lemon juice at the end to preserve brightness. Adjust chili flakes to taste. For a vegan version, substitute butter with coconut oil or vegan margarine.
