Flavorful Peach Jalapeño Chicken Thighs Recipe Easy Sweet and Spicy Glaze

Juicy bone-in, skin-on chicken thighs glazed with a sweet and spicy peach jalapeño butter glaze, perfect for a quick and flavorful summer to fall transition meal.

  • 6 bone-in, skin-on chicken thighs (about 3 lbs / 1.4 kg)
  • 2 medium fresh peaches, peeled and diced (or 1 cup / 150g frozen peaches, thawed)
  • 12 jalapeños, seeded and finely chopped (adjust for heat preference)
  • 3 tablespoons unsalted butter, softened
  • 1/4 cup (about 80g) peach preserves
  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • Salt, to taste (preferably kosher salt)
  • Black pepper, to taste (freshly cracked)
  • 2 tablespoons olive oil

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with salt, pepper, and smoked paprika.
  2. In a bowl, combine softened butter, peach preserves, minced garlic, chopped jalapeños, diced peaches, and apple cider vinegar. Stir until smooth but still slightly chunky. Set aside for about 10 minutes.
  3. Heat olive oil over medium-high heat in a large cast iron or heavy-bottomed oven-safe skillet until shimmering.
  4. Place the chicken thighs skin-side down and cook for 6-8 minutes without moving, until the skin is crisp and golden brown.
  5. Flip the chicken and sear the other side for 3 minutes.
  6. Spoon generous amounts of the peach jalapeño glaze over each chicken thigh.
  7. Transfer the skillet to a preheated oven at 400°F (200°C) and roast for 15-20 minutes, until an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
  8. Remove skillet from oven and let chicken rest for 5 minutes to lock in juices.
  9. Spoon any extra glaze from the pan over the chicken before serving.

Notes

Pat chicken dry thoroughly to ensure crispy skin. Do not overcrowd the pan to avoid steaming. Watch the glaze while roasting to prevent burning; cover loosely with foil if needed. Let chicken rest after roasting to keep it juicy. For milder heat, remove jalapeño seeds or reduce quantity. Can substitute butter with ghee or coconut oil for dairy-free option. Frozen peaches can be used if fresh are unavailable.
