  • 1/3 cup chopped sun-dried tomatoes packed in oil
  • 3 cloves garlic, freshly minced
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth
  • 1/2 cup (50 grams) freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)
  • 1/4 cup fresh basil, roughly chopped
  • Olive oil for cooking
  • Salt and black pepper to taste

Instructions

  1. Pat dry chicken breasts and season both sides generously with salt, black pepper, and Italian seasoning.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and keep warm.
  3. Lower heat to medium. Add 1 tablespoon olive oil if pan is dry. Sauté minced garlic for 30 seconds until fragrant, then add sun-dried tomatoes and cook for 1 minute.
  4. Pour in chicken broth, scraping browned bits from the pan. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until sauce thickens, about 3-4 minutes. Adjust seasoning with salt, pepper, and red pepper flakes if using.
  6. Return chicken to the pan, nestle into sauce, cover, and simmer gently for 5 minutes to marry flavors and warm through.
  7. Sprinkle fresh basil over the chicken just before serving.

Notes

Do not overcrowd the pan when searing chicken to ensure a golden crust. Use room temperature chicken for even cooking. Add garlic last before liquids to avoid burning. Use freshly grated Parmesan for best flavor. Simmer sauce gently to prevent curdling. Adjust sauce thickness by adding broth or cream as needed.
