  • 8 oz angel food cake or pound cake, cubed
  • 2 tbsp honey (optional)

Instructions

  1. Prepare the Burgers (20 minutes): In a large bowl, combine ground beef with smoked paprika, chipotle powder, salt, and black pepper. Mix gently but thoroughly. Form into 6 even patties about 4 inches wide and 3/4 inch thick. Cover and refrigerate.
  2. Boil the Potatoes (15-20 minutes): Place red potatoes in salted water. Bring to a boil and cook until fork-tender, about 15 minutes. Drain and let cool before chopping.
  3. Make the Chipotle Mayo (5 minutes): Mix mayonnaise with minced garlic, chipotle powder, and chopped cilantro. Adjust seasoning to taste.
  4. Prepare the Potato Salad (10 minutes): Combine chopped potatoes, celery, green onions, Greek yogurt, Dijon mustard, and dill in a large bowl. Toss gently and season with salt and pepper.
  5. Grill the Corn and Burgers (15-20 minutes): Preheat grill to medium-high (400°F). Grill corn, turning every 5 minutes until charred, about 15 minutes. Grill burgers 4-5 minutes per side to 160°F internal temperature. Toast buns on grill last minute.
  6. Assemble and Serve (5 minutes): Spread chipotle mayo on buns, add burger patties, and top with lettuce or tomato if desired. Serve grilled corn brushed with butter and salt. Serve potato salad chilled and watermelon on the side.
