  • 1 ribeye steak (1216 oz, 1 to 1.5 inches thick), well-marbled
  • 2 tablespoons ground coffee (medium or coarse grind, preferably freshly ground dark roast)
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1.5 teaspoons kosher salt or sea salt
  • 1 teaspoon freshly ground black pepper
  • 4 tablespoons (60g) unsalted butter, softened
  • 2 cloves fresh garlic, minced
  • 2 tablespoons fresh herbs (parsley, thyme, rosemary), finely chopped
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Remove the ribeye steak from the fridge about 30 minutes before cooking to bring it to room temperature. Pat dry with paper towels.
  2. In a mixing bowl, combine ground coffee, brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Generously coat both sides of the ribeye with the coffee rub, pressing it gently into the meat.
  4. In a small bowl, mix softened butter with minced garlic, chopped fresh herbs, and optional lemon zest until well combined. Set aside.
  5. Preheat grill to medium-high (about 450°F) or heat a cast iron skillet over medium-high until very hot but not smoking.
  6. Place the ribeye on the grill or skillet. Cook for about 4-5 minutes per side for medium-rare (internal temperature 130-135°F). Flip once using tongs.
  7. Remove steak from heat and transfer to a plate. Spoon a generous dollop of garlic herb butter on top, letting it melt. Tent loosely with foil and rest for 5-10 minutes.
  8. Slice the steak against the grain into thick strips and serve immediately with any leftover garlic herb butter.

Notes

Patting the steak dry before applying the rub is essential for a good sear. Use tongs to flip the steak to avoid piercing and losing juices. Rest the steak after cooking to redistribute juices. For dairy-free, substitute butter with vegan butter or olive oil mixed with garlic and herbs.
