  • 12 chipotle peppers in adobo sauce
  • 1 tbsp fresh lime juice
  • 1 tsp honey or agave

  • 8 small corn or flour tortillas
  • Extra lime wedges and cilantro for garnish

Instructions

  1. Marinate the shrimp: In a medium bowl, combine lime juice, chopped cilantro, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Add shrimp and toss to coat evenly. Set aside for 10 minutes.
  2. Prepare the mango slaw: In a large bowl, mix shredded cabbage, julienned mango, thinly sliced red onion, and chopped cilantro. Drizzle with lime juice and sprinkle with salt. Toss gently to combine and keep crisp.
  3. Make the chipotle crema: In a small food processor or blender, combine sour cream or Greek yogurt, chipotle peppers, lime juice, honey, and salt. Blend until smooth and creamy. Adjust chipotle quantity to taste.
  4. Cook the shrimp: Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook 2-3 minutes per side until pink and slightly charred. Cook in batches if needed. Remove from heat.
  5. Warm the tortillas: Heat tortillas in a dry skillet or microwave for 20-30 seconds wrapped in a damp paper towel until pliable.
  6. Assemble the tacos: Place warmed tortillas on plates. Add a spoonful of mango slaw, arrange shrimp on top, drizzle with chipotle crema, and garnish with extra cilantro and lime wedges.
  7. Serve immediately while shrimp are warm and slaw is crisp.

Notes

Do not marinate shrimp longer than 10-15 minutes to avoid mushy texture. Pat shrimp dry before marinating if wet. Cook shrimp in batches to avoid steaming. Use firm ripe mango for best slaw texture. Adjust chipotle peppers in crema to control heat. Warm tortillas just enough to be pliable but not soggy. Slaw is best tossed with lime juice and salt just before serving to keep crisp.
