These shrimp skewers feature a smoky chipotle and zesty lime marinade, grilled to juicy perfection with a fresh cilantro finish. Perfect for quick weeknight dinners or summer BBQs.

  • 1 pound large shrimp, peeled and deveined (tail-on or off)
  • 1 teaspoon chipotle powder
  • Juice of 2 medium limes
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt, or to taste
  • 1/4 cup fresh cilantro, finely chopped
  • Wooden or metal skewers (if wooden, soak in water for at least 30 minutes before grilling)

Instructions

  1. In a medium bowl, mix together olive oil, lime juice, chipotle powder, ground cumin, minced garlic, honey, and salt. Whisk until well combined.
  2. Add shrimp to the marinade and toss gently to coat evenly. Cover and refrigerate for 15-20 minutes. Do not marinate longer than 30 minutes.
  3. Preheat grill to medium-high heat (about 400°F). Lightly oil the grill grates to prevent sticking.
  4. Remove shrimp from marinade and thread about 4-5 shrimp per skewer. Discard leftover marinade.
  5. Grill shrimp skewers for 2-3 minutes per side until shrimp are opaque, slightly charred, and firm to the touch.
  6. Remove from grill and sprinkle with fresh chopped cilantro. Let rest for a minute before serving.

Notes

Do not marinate shrimp longer than 30 minutes to avoid ‘cooking’ the shrimp with lime juice. Pat shrimp dry before grilling to prevent flare-ups. Turn shrimp only once during grilling to avoid falling apart. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
