Easy Turkey Club Pinwheel Wraps

Quick, tasty, and freezer-friendly turkey club pinwheel wraps featuring crispy bacon, fresh lettuce, ripe tomato, and a creamy mayo-mustard spread rolled in soft tortillas. Perfect for grab-and-go snacks or light lunches.

  • Large flour tortillas, about 10 inches diameter
  • 8 ounces thinly sliced deli turkey breast (smoked or roasted)
  • 6 slices bacon, cooked crisp and drained
  • 4 large leaves leaf lettuce (romaine or butter lettuce)
  • 1 medium ripe tomato, thinly sliced
  • 1/4 cup mayonnaise (60 ml)
  • 1 tablespoon Dijon mustard (15 ml)
  • Salt and pepper to taste
  • Optional: thinly sliced avocado
  • Optional: 4 slices cheese (Swiss or cheddar)

Instructions

  1. Preheat oven to 400°F (200°C). Lay bacon strips on a wire rack set over a baking sheet or directly on foil. Bake for 15-20 minutes until crispy. Remove and drain on paper towels. Let cool completely.
  2. In a small bowl, whisk together mayonnaise and Dijon mustard until smooth. Set aside.
  3. Rinse and pat dry lettuce leaves. Slice tomato thinly and season lightly with salt and pepper. Slice avocado or cheese if using.
  4. Lay one large tortilla flat on work surface. Spread a thin, even layer of the mayo-mustard mixture over the entire surface, leaving about a 1/2-inch border.
  5. Layer turkey slices evenly across the tortilla, followed by bacon strips, lettuce leaves, and tomato slices. Add cheese or avocado if desired.
  6. Starting from one edge, roll the tortilla tightly but gently, keeping the filling snug inside without squishing ingredients out.
  7. Wrap the rolled tortilla tightly in plastic wrap and chill in the fridge for at least 30 minutes to help hold its shape.
  8. Using a sharp serrated knife, slice the wrap into 1-inch thick pinwheels, yielding about 10-12 pinwheels per wrap.
  9. Individually wrap each pinwheel in plastic wrap or parchment paper and place in a freezer-safe container or bag. Freeze for up to 2 months.
  10. To serve, thaw pinwheels in the fridge for 1-2 hours or enjoy slightly chilled. Optionally warm in microwave for 20-30 seconds.

Notes

Do not overstuff the wraps to prevent falling apart. Chill wraps before slicing for clean pinwheels. Use thick-cut bacon for better texture. Pat veggies dry to avoid soggy tortillas. Wrap pinwheels tightly before freezing to prevent freezer burn. Optionally bake sliced pinwheels for 5 minutes at 375°F for a warm snack.
