A quick and easy honey garlic chicken recipe featuring tender chicken thighs and sweet carrots simmered in a sticky, flavorful glaze. Perfect for cozy dinners and busy weeknights.

  • 1.5 pounds boneless, skinless chicken thighs, trimmed and patted dry
  • 3 medium carrots, peeled and sliced into 1/4-inch thick rounds
  • 1/4 cup (85g) pure honey
  • 1/4 cup (60ml) low-sodium soy sauce
  • 4 cloves garlic, minced finely
  • 2 tablespoons (30ml) rice vinegar
  • 2 tablespoons (30ml) olive oil
  • 1/4 cup (60ml) water
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Freshly ground black pepper, to taste
  • Optional garnish: chopped green onions or sesame seeds

Instructions

  1. Slice the carrots into uniform 1/4-inch rounds. Pat the chicken thighs dry with paper towels. Mince the garlic finely.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and water. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken thighs in a single layer without crowding. Cook 3-4 minutes per side until golden brown but not fully cooked through.
  4. Nestle sliced carrots around the chicken in the skillet. Pour the honey garlic sauce over everything and gently stir or shake to coat.
  5. Reduce heat to medium-low and cover loosely with a lid. Simmer for 8-10 minutes until chicken reaches 165°F (74°C) and carrots are tender but still slightly crisp. Stir occasionally.
  6. Mix cornstarch with cold water to make a slurry. Push chicken and carrots to one side of the pan and pour in the slurry. Stir gently and cook 2-3 minutes until sauce thickens to a glossy glaze.
  7. Taste and add freshly ground black pepper as needed. Remove from heat and garnish with chopped green onions or sesame seeds if desired. Serve hot over rice or steamed greens.

Notes

Pat chicken dry before searing to get a golden crust. Do not overcrowd the pan to avoid steaming. Simmer on medium-low heat to keep chicken tender and carrots crisp. Use cornstarch slurry to thicken sauce at the end. Add water if sauce thickens too quickly. Uniform carrot slices ensure even cooking.
