A warm, cozy Halloween cocktail featuring spiked apple cider with a cinnamon sugar rim. This easy recipe combines apple cider, bourbon or dark rum, and warm spices for the perfect fall drink.

  • 1 tablespoon ground cinnamon
  • 1 tablespoon honey
  • 4 cups apple cider
  • 2 cinnamon sticks
  • 4 whole cloves
  • 1 star anise (optional)
  • 1 tablespoon honey or maple syrup
  • 4 ounces bourbon or dark rum (about 1.5 ounces per serving)
  • Apple slices and additional cinnamon sticks for garnish

Instructions

  1. In a small shallow dish, combine 2 tablespoons granulated sugar and 1 tablespoon ground cinnamon. Mix until evenly distributed.
  2. In another small dish, pour about 1 tablespoon honey. If thick, warm in microwave for 5 seconds.
  3. Dip the rim of your mug or glass into the honey, rotating to coat. Let excess drip off, then dip into cinnamon sugar mixture. Press gently and rotate for even coverage. Set aside to let rim set for 2-3 minutes.
  4. Pour 4 cups apple cider into a small saucepan. Add 2 cinnamon sticks, 4 whole cloves, and 1 star anise (if using).
  5. Place saucepan over medium heat and bring to a gentle simmer (small bubbles around edges, not boiling). Simmer for 5-7 minutes, stirring occasionally.
  6. Remove from heat. Stir in 1 tablespoon honey or maple syrup. Taste and adjust sweetness if desired.
  7. Pour 1.5 ounces (about 3 tablespoons) bourbon or dark rum into each prepared mug.
  8. If using whole spices, pour spiced cider through a fine mesh strainer into the mugs. Fill almost to the top.
  9. Garnish with a thin apple slice and an extra cinnamon stick. Serve immediately.

Notes

Don’t boil the cider; keep at a gentle simmer. Let the cinnamon rim set for 2-3 minutes before pouring hot cider to prevent it from sliding off. For a party, make the spiced cider base ahead without alcohol and keep warm in a slow cooker. Toast cinnamon sticks in a dry skillet for 30 seconds before adding to release more flavor.
