A quick, healthy, and flavorful recipe featuring spicy ground turkey wrapped in crisp lettuce leaves, perfect for light dinners or lunches.

  • 1 lb (450 g) lean ground turkey
  • 1 head romaine or butter lettuce leaves
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 fresh jalapeño, seeded and minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sriracha
  • 1 tsp honey
  • 1 tsp fresh grated ginger
  • 1 tsp sesame oil
  • ½ cup (60 g) shredded carrots
  • 2 green onions, thinly sliced
  • ¼ cup chopped cilantro (optional)
  • Salt and black pepper to taste

Instructions

  1. Rinse and separate the lettuce leaves, pat dry with paper towels. Finely chop the onion, mince the garlic, seed and mince the jalapeño. Shred the carrots and slice the green onions. Set aside.
  2. Heat a non-stick skillet over medium-high heat and add a splash of oil. Add chopped onion and jalapeño and sauté for 2-3 minutes until softened and fragrant.
  3. Add garlic and cook for 30 seconds until aromatic.
  4. Add ground turkey, breaking it apart with a spatula, and cook until no longer pink, about 5 minutes.
  5. Stir in soy sauce, sriracha, honey, grated ginger, and sesame oil. Cook for 2-3 minutes to let flavors meld. Season with salt and pepper to taste.
  6. Add shredded carrots and half of the sliced green onions, stirring to combine.
  7. Arrange lettuce leaves on a serving platter. Spoon turkey mixture into each leaf and sprinkle with remaining green onions and cilantro if using. Serve immediately.

Notes

Do not overcrowd the pan to ensure the turkey browns properly. Add garlic toward the end of sautéing to avoid bitterness. Soak lettuce leaves in ice water briefly if they feel stiff or cold to keep them crisp. Adjust spice level by reducing jalapeño or sriracha. Store turkey filling separately from lettuce to prevent sogginess.
