This easy small-batch apple crisp for two is the perfect cozy dessert for date night or self-care. Tender cinnamon-spiced apples under a buttery, crunchy oat topping, ready in under an hour with no leftovers.

Ingredients

Scale
  • 2 medium apples (about 300g total), peeled, cored, and diced into 1/2-inch cubes
  • 2 tablespoons granulated sugar (25g)
  • 1 tablespoon brown sugar (12g), packed
  • 1 tablespoon all-purpose flour (8g)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg (optional)
  • 1 teaspoon fresh lemon juice
  • 1/3 cup old-fashioned rolled oats (30g)
  • 1/3 cup all-purpose flour (42g)
  • 1/4 cup brown sugar (50g), packed
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons unsalted butter (42g), cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Place a baking sheet on the middle rack to catch any drips.
  2. Peel, core, and dice apples into roughly 1/2-inch cubes. Toss immediately with lemon juice to prevent browning.
  3. In a medium bowl, combine diced apples with granulated sugar, brown sugar, flour, cinnamon, and nutmeg. Stir until evenly coated. Let sit for 5 minutes.
  4. In a small bowl, whisk together oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Use a pastry cutter, two forks, or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse meal with some pea-sized butter pieces remaining.
  5. Divide the apple mixture evenly between two 8-ounce ramekins (or a small baking dish). Sprinkle the oat topping evenly over the apples, pressing down gently.
  6. Place ramekins on the prepared baking sheet and bake for 30-35 minutes, until topping is golden brown and filling is bubbling. If topping browns too quickly after 25 minutes, tent loosely with foil.
  7. Remove from oven and let cool on a wire rack for at least 10 minutes.
  8. Serve warm with vanilla ice cream, whipped cream, or a drizzle of heavy cream.

Notes

Keep butter cold for a flaky topping. Use a mix of sweet and tart apples (e.g., Honeycrisp and Granny Smith). Let the crisp rest for 10-15 minutes after baking to allow juices to thicken. For gluten-free, use a 1:1 gluten-free flour blend and certified gluten-free oats. For vegan, substitute butter with cold coconut oil or vegan butter.
